
The cooling of coffee follows an elegant law of classical Newtonian physics — describing how a hot liquid gradually descends towards the “golden zone” of 50–65 °C, perfect for both flavour and the survival of your tongue.
With infusion coffee in a large cup, the curve is predictable: after 8 minutes and 54 seconds it is ideal; after 16 minutes and 50 seconds it is already lukewarm and sad.
Then there is Italy.
Here we have the espresso, which cheerfully ignores Newton and obeys the laws of Italian Quantum Thermodynamics:
- It never cools down. The more of a hurry you are in, the more it remains magmatic, ready to melt steel — and patience.
- The perfect moment lasts 15 seconds. After that, both temperature and dignity plummet.
Any attempt to model the temperature of an espresso mathematically would fail unless it included variables such as:
- the psychological pressure of the barista staring at you to work out if you are a tourist;
- the elderly man at the counter who has already drunk his coffee, paid, discussed geopolitics and bought a lottery ticket — all during your 40 seconds of hesitation;
- the quality of the teaspoon, which quantum-influences the drinker’s mood, acting as an antenna for micro-fluctuations in personal dignity.
Quantum postulate: you cannot measure both temperature and satisfaction at the same time. Observing one inevitably alters the other.
And so, from a distance, I see you drink: I do not know if it is perfect or scalding —but I do know that in 15 seconds it will be too late.
